Job DescriptionTitle: Kitchen ManagerReports to: Restaurant
General ManagerSummary of Position:
Work in concert with restaurant general manager and in the absence
of such manager; assume responsibility of restaurant and its staff.
Work in co-operation with all members of management and general
office staff. Supervise and direct dining room employees.
Know and enforce company policy and procedure. Work within the
confines of federal and state labor laws and health department
requirements. Be familiar with kitchen and dish room operations and
procedures. Attend and participate in weekly staff meeting.Duties &
Responsibilities:(a) Supervise dining room employees and
operations(b) Ensure customer service exceeds guests'
expectations(c) Schedule and co-ordinate shift schedules(d) Write
work schedules(e) Recruit, select, orientate, and supervise
training of dining room employees(f) Direct and delegate work of
all dining room employees and those of kitchen staff in absence of
chef or general manager(g) Maintain dining room/restrooms/waiting
room housekeeping standards(h) Follow progress of dining room
employees1. -Ensure that staff skills meet company standards as
outlined in Hospitalityand Standards Manual
2. -Ensure that staff projects an amiable and cordial attitude to
guests
3. -Ensure that staff appearance meets standards as outlined in
Hospitality andStandards Manual
4. -Follow through on training and re-training
5. -Ensure safety procedures and policies are followed
6. -Schedule meal and rest breaks17. -Maintain records(i) Clerical
duties to include1. -Daily Cash Report
2. -Armored Car Manifest
3. -Payroll Time Sheets
4. -Balance Cash Drawers
5. -Maintain various records pertaining to: i. Customer counts ii.
Special menu features iii. Comment cards iv. Cleaning schedules v.
Computer print outs on sales, service, item count, etc. vi. Floor
Reports vii. Employers First Report of Illness or Injury viii.
Employee records ix. BeSafe Bingo(j) Food1. -Ensure proper
appearance and plate presentation
2. -Ensure proper portion control
3. -Monitor preparation and service timeliness
4. -Expedite where necessary
5. -Control and correct waste
6. -Practice re-cycling where applicableQualifications:
